Dry fish is one of the many popular dishes circulating in the Caribbeans.....
First, when you catch or purchase your full fish.....you want to split it from head to tail.....Then you want to clean out the insides.....Then you preserve the fish by covering it with salt.....Not so heavy that it will build up.....just enough to see that the two halves are covered in salt.....Then comes the tricky part.....Let it sit outside for a day or two( depending on the temperature).....if its 90 degrees or more.....a day will be fine.....the purpose is to dry out the fish.....
After that process.....you then wash as much salt off as you can......then proceed to boil the rest of the salt off.....After about 10 minutes, take out the fish and put it with your vegetables to cook.....Some Caribbeans put the fish inside of spinach and cook it with the vegetables.....The fish will be so tender that you can break it up and mix it in with your vegetables.....Tomatoes are recommended for a nice blend of tastes.
